Gluten free gingersnaps

The great little ‘bite’ ginger supplies is a refreshing change from chocolate-chip cookies and brownies. Roll the gingersnap recipe into bigger cookies, and make epic ice-cream sandwiches out of ‘em! Jules makes s’mores year-round with her kids. When there’s a fire in the fireplace during the winter, and any time there’s an open fire outside in the warmer months. It helps to have her gluten free graham cracker mix on hand! Once you work with the dough, you’ll understand why this great mix is also perfect for gingerbread men and, of course, gingerbread houses! All of which taste like “normal,” but all of which will be certifiably gluten free—just the way you like it!

White Rice Flour, Brown Rice Flour, Modified Tapioca Starch, Cornstarch (non-GMO), Potato Starch, Corn Flour (non-GMO), Baking Powder, Salt, Cinnamon, Xanthan Gum.

gfJules' Graham Cracker Mix

gfJules™ Gluten Free Graham Cracker & Gingerbread Mix — makes +/- 100 crackers

Ingredients to add:

3/4 cup vegetable shortening or coconut oil

1/2 cup water

1 cup brown sugar or unrefined coconut palm sugar

1/4 cup honey or agave nectar for graham crackers (molasses for gingersnaps)

1 tsp pumpkin pie spice (for gingerbread only)

Instructions:

Beat shortening with brown sugar until light & fluffy. Add honey. Slowly stir in mix and spice, if using, adding water, as needed until dough holds together in ball. If dough is too dry, gradually add more water. Cover tightly & refrigerate at least 2 hours to reduce stickiness.

Preheat oven to 325ºF.

Divide and wrap half of dough.

Roll out other half onto counter or mat dusted with gfJules Flour.

FOR GRAHAMS:

Roll to desired thickness & cut into rectangles.

Place on parchment-lined cookie sheets.

Prick crackers with fork.

Bake ~ 20 minutes or longer for crunchier crackers.

FOR GINGERBREAD MEN:

Roll dough to 1/8” thickness & cut with cookie cutters.

Move to parchment-lined cookie sheets.

Bake ~ 20 minutes or longer for crunchier cookies.

Repeat steps with remaining dough.

    I finally made these today using a mix I bought last winter. I had a recipe for a quick s’mores recipe done in the oven. I made the recipe and made 1/4 fourth and froze the rest in fourths. I rolled them very thin and got about 34 cookies. The baked up beautifully, I made the s’mores recipe for my company. My husband, granddaughter, and son-in-law had the store bought graham crackers. I made a smaller batch with the gluten free cookies for myself and my daughter. My husband and my son-in-law had a plain cookie from the mix and wanted to know why I did use them for the batch they got. They said the gluten free ones were better than the regular graham cracker, Simple indoor s’more recipe. Lay crackers close together on a foil lined pan (helps with clean up), Sprinkle with chocolate chip of your choice and mini marshmallows and put 6 inches from the broiler until marshmallows are golden brown. It only take a couple of minutes so don’t walk away from the stove.

    I just made a batch of these so I can make a graham cracker crust tomorrow. Of course, you can’t make graham crackers and not have at least one s’more! They are delicious! The dough rolls out so well and the recipe is super easy. It’s so great to have someone take the time to come up with a mix that makes it easy to have great gluten free food fresh out of the oven.

    I really enjoyed the graham cracker mix, it’s so versatile. I have dough in my freezer divided up ready for fresh graham crackers & ginger snap cookies. The cookies come out perfect every time. Ive made the dough and cooked them right away, froze the dough and cooked them after it was defrosted and froze the cookies themselves so they keep longer. They’ve been delicious every time. It’s so nice to eat a gluten free cookie that is safe to eat and be so tasty.

    I love the graham crackers! It’s so nice to have gf foods that don’t taste like cardboard and taste good for multiple days. My only question is if I’ve added 3/4 of water and my dough is still super crumbly after it’s been in the fridge for 2 hours, should I continue to add more water? Thank you for making gf foods that are ACTUALLY good!

And thank you so much for taking the time to write a review – it’s so helpful to others to see that people just like them have truly enjoyed the products. About the grahams, it can make a difference what kind of shortening you use — some require the addition of more water than others. That being said, refrigeration also dries dough out, especially if it’s not covered super well, so that can make dough more crumbly. Because this dough is so simple, you won’t hurt anything by adding more water. Just add water a little bit at a time and blend it into the dough until it’s soft and holds together well and isn’t crumbly at all. Then you know it’s ready!     Tried this mix a couple years ago for my son who is anaphylactic to 5 of the top 8 and tons of other foods. It was an instant hit and a repeated request ever since. We easily make them with coconut oil and molasses. The dough is so simple to roll too! I roll and cut into either squares or shapes. Everyone in the house loves them and they couldn’t be easier to make! gfJules products are the best!

    I made these graham crackers in Baltimore, wrapped them in foil, put them in a tin and then shipped them across the country to Colorado for a Family camping trip ,which included three Celiacs and three gluten intolerant.     Tried these for the first time and am very impressed. I chose to divide the dough into quarters rather than in half to roll them out due to limited counter space. After rolling it out, I trimmed the dough to a rectangle with a pizza cutter and then cut that into squares. I then combined the trimmings and pressed them into a pie pan to make the first graham cracker crust I’ve eaten in years! Will definitely be buying more.

    As a small business owner, I cheat a little and use this mix to make GF & Vegan Graham Crackers. This is by far my most popular product! I have gluten eating folks saying they taste better than what they normally have. I am still getting used to rolling things out evenly, but no one has complained. If I mention the varied thicknesses of the crackers, people laugh at me because they only care about how great they are! And even with my variations in rolling, I never have trouble baking them, they are perfect no matter what mistakes I make, or if I forget to put a timer on… 🙂 As an aside, I also recommend trying them with maple syrup for another delicious variation!

    Wasn’t quite sure if I could believe the reviews about just how good these were but after purchasing pre-made gf grahams in the store, I figured it was worth a try. WOWZERS! These are amazing!! Confess it has been several years since I’ve had the glutenous version but these are very close to what I remember! I chose to make mine a little chewier and they make GREAT ice cream sandwiches.     Delicious gingerbread muffins! I followed your gingerbread recipe. Using a bag of your GF Graham Cracker Mix with coconut sugar, I choose to use Earth Balance Shortening Sticks, 1/4 cup applesauce and 1 cup pumpkin puree. I filled the cupcake paper liners to the very top. This made 12 medium sized cupcakes. They rose above the liners but did not spill over. Muffins were pretty, easy to make, tasted delicious & moist and kept well in the refrigerator for a week.

    This mix makes a large batch of graham crackers, which is good because my kids can’t stop eating them. Soo good! I was hoping to have some to make a graham cracker pie crust, but I think I’m out of luck until I make another batch.

    It was quick and easy to mix up. To roll them out, I didn’t add extra flour as the directions said to do. I simply rolled them out on parchment paper, with plastic wrap on top. That works out well for me, and I don’t have to worry about extra flour. I rolled out half the dough to about a 12″x 16″ rectangle, and cut the crackers into roughly 2″ squares. (I ended up with about 80 crackers.) I sprinkled some of them with cinnamon-sugar before baking and they were even tastier. Perfect for some yummy s’mores, or just for snacking.

    This is one of the tastiest gingerbread/graham cracker mixes I have ever tasted! I was a little surprised that I actually had enough to make our gingerbread house after all the little bites of dough I snuck. 😉 It was perfectly sweet with the right amount of spice. The dough, once made, was SO easy to work with and roll out. Again, I was expecting a sticky mess because that is what often happens with gluten-free doughs. Not with this mix. I easily rolled out my gingerbread and just as easily cut out the shapes needed to make our house. After baking the gingerbread, they were sturdy enough to build the house but not so hard that I couldn’t sneak a few more bites to enjoy. Our house stayed together though little hands were decorating and building and even remained in tact the entire month of December! I LOVE this mix and can’t wait to use it again next year!
