- 2 cups fresh or frozen berries rinsed
- 1/2 cup granulated sugar or coconut palm sugar
- 1 Tbs. lemon juice
Clean fresh fruit, then add to a medium-sized saucepan together with sugar and lemon juice. Bring to a low boil over medium-high heat, stirring constantly.
It's all about the sugar dissolving, so if it's not dissolved yet, reduce heat to a simmer and keep stirring until no longer crunchy -- in other words, until there are no sugar crystals left.
If you prefer your berry coulis chunky, the consistency may be perfect for you at this point; otherwise, press gently through a sieve or transfer to a blender.
If blending, purée until smooth, strain seeds (if desired), then set aside to fully cool before storing.
Coulis stores well in a sealed container in the refrigerator for 1 week.
