Bring all ingredients to room temperature. Mix egg, oil, warm water, focaccia mix, and yeast packet (comes with mix) for 2-3 minutes. Dough will be wet and sticky.
Lightly oil the inside of a quart size or larger freezer bag, if using (not necessary with piping bag) Cut one 3/4" corner out of bag or piping bag. Place dough inside the bag and squeeze to the corner.
Line a baking sheet with parchment, then pipe out breadsticks to the length you prefer. The dough makes enough for 8 breadsticks at a length of about 6 inches.
Sprinkle with any toppings, if desired, then cover with another sheet of parchment and set aside to rise for about 30-40 minutes in a warm spot. While rising, preheat your oven to 400℉ (static) or 375℉ (convection).
Remove top parchment and bake for about 12 minutes. Test with a toothpick inserted into the center to ensure the inside is not doughy before removing to cool. Pressing lightly with a finger, the bread should bounce back and be lightly browned on top. Remove to cool.
