Preheat the oven to 350°F. Line two large baking sheets with parchment paper.
In a large mixing bowl, combine the cake mix, oil, and eggs. Stir until a thick batter forms.
Fold in the sprinkles, if using.
Use a cookie scoop and place scoops of the cookie dough on the baking sheets, leaving about 2” of space between each cookie.
Bake for 16-18 minutes. The cookies should be just beginning to brown on the edges.
Let the cookies cool on the pan for 5 minutes before transferring them to a cooling rack to cool completely.
Store leftover cookies in an airtight container at room temperature.
