Preheat the oven to 350°F. Line two large baking sheets with parchment paper.
Whisk together oil and eggs in mixing bowl.
Stir in gfJules Cake Mix slowly, then mix well to integrate, but mix a total of no more than 1 minute with mixer. Fold in sprinkles. Dough will be thick.
Use a #40 cookie scoop to make approximately 30 cookies, or a #20 scoop to make approximately 12-15 cookies. Place scoops of cookie dough on the baking sheets, leaving about 2” of space between each cookie.
Bake for 12 minutes for smaller cookies or 16-18 minutes for larger ones. The cookies should be just beginning to brown on the edges but still be quite soft.
Allow the cookies to cool on the pan for 5 minutes before transferring them to a cooling rack to cool completely.
Store leftover cookies in an airtight container at room temperature.
Note: This recipe is easily doubled using 1 FULL gfJules Best Gluten Free Cake Mix and simply doubling the other ingredients.
