Gluten Free Grated Sweet Potato Casserole

This grated gluten free sweet potato casserole is the perfect addition to your Thanksgiving meal or to any fall menu. With plenty of cinnamon and spices plus a few ingredients you probably already have on hand, you can have this dish on the table in about an hour!

Ingredients
  

  • 1/2 cup butter or vegan butter melted
  • 6 eggs beaten
  • 1 1/4 cup granulated sugar may reduce or increase, if preferred
  • 2 cups milk of choice dairy or non-dairy
  • 7 Tablespoons just under 1/2 cup gfJules Gluten Free All Purpose Flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon allspice
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 6 cups shredded peeled, uncooked sweet potatoes

Instructions

  • Lightly oil one 9x13 pan and set aside.
  • Preheat oven to 350F.
  • Peel then grate sweet potato to measure 6 cups.
  • In a large mixing bowl, whisk together eggs, sugar and milk. Stir in melted butter.
  • In a separate bowl, whisk together gfJules Flour with spices and salt.
  • Add flour mixture to milk mixture, whisking or beating until totally integrated.
  • Stir in grated sweet potatoes, then pour into the pan before the sweet potatoes sink to the bottom of the bowl.
  • Bake for approximately 50 minutes, or until it is no longer jiggly in the middle of the casserole and a knife or toothpick inserted into the center comes out clean.
  • Turn oven off and open oven door to allow casserole to cool slowly before serving.
