Gluten Free S’Mores Cookies

Ingredients
  

  • 1 batch gluten-free Graham Cracker Cookie Recipe or gfJules® Graham Cracker Mix
  • 1 batch gluten-free Chocolate Chip Cookie Dough or gfJules® Original Cookie Mix chilled
  • 1 cup mini marshmallows Dandies® are vegan
  • 1 cup chocolate chips Pascha® or Enjoy Life® are vegan
  • Chocolate squares broken from a gluten-free chocolate bar or use Enjoy Life® Mega Chunks one mega chunk or chocolate piece per cookie

Instructions

  • Bake gluten free graham crackers from gfJules Gluten Free Graham Cracker Mix or from-scratch recipe.
  • When making the cookie dough, add marshmallows as well as chocolate chips. Cover and chill for 1-2 hours for best results. (May bake immediately, though.)
  • Preheat oven to 350° F for static ovens, 325° F for convection.
  • Line cookie sheets with parchment paper.
  • Fill lined cookie sheets with already baked graham crackers, spaced one inch apart. Scoop rounded tablespoons of chilled cookie dough onto each graham cracker.
  • Bake for 7 minutes, then lay a chocolate piece on top of each cookie. Return to the oven for another 2-3 minutes. Remove when the chocolate chip cookies are still soft and only lightly browned around the edges so they will stay chewy.
  • Makes approximately 50 S’mores Cookies. (You will have extra graham crackers for snacking or for making real s’mores by the fire!)
