- 8 oz Greek or non-dairy yogurt
- 1 cup unrefined coconut palm sugar or white cane sugar
- 2 eggs or substitute
- 1 Tbs. pure vanilla extract
- 2 cups gfJules™ Gluten Free All Purpose Flour
- 2 tsp. baking powder
- ½ tsp. baking soda
- ¼ tsp. sea salt
- 1 ½ cups tart or semi-sweet apples peeled & finely chopped
- ¼ – ½ cup chopped pecans optional
Preheat oven to 350º F.
Combine yogurt, sugar, eggs and vanilla extract. Next stir in gfJules flour, baking powder, baking soda and salt, mixing well. Finally add finely chopped apples and pecans, if using.
Spoon the batter into an oiled 9 x 5 inch loaf pan sprinkle with another quarter cup of pecans if like.
After baking 45 minutes cover the bread with aluminum foil to prevent the pecans from burning if you included them on top. Bake an additional 15 minutes or until a wooden pick inserted into the center comes out clean.
