Preheat oven to 350° degrees.
Whisk together gfJules™ Flour, baking soda and salt in a small bowl.
In a separate large mixing bowl, cream butter and sugar until lighter and fluffy. Add eggs and beat to combine. Add mashed bananas, yogurt, lime juice and vanilla. Beat until fully integrated and no large chunks of mashed banana remain.
Stir in flour mixture, mixing just until combined. Fold in the lime zest.
Spoon batter into an oiled 9×5″ loaf pan. Bake for 50 minutes - 1 hour, or until a toothpick inserted into the bread in several places comes out clean. Cover the bread with foil if it is not yet baked but the top is looking very brown.
Once fully cooked, remove pan from the oven to a wire rack for 15 minutes, then gently remove from the pan to cool completely before icing.
To make the icing, whisk confectioner’s sugar with lime juice and zest, stirring to make a thick, but spreadable mixture. If it is too runny, add more confectioner’s sugar by the tablespoon; if it’s too thick, add one teaspoon of lime juice or milk of choice. If you prefer a thinner icing, simply add more lime juice by the teaspoon until the consistency you like is achieved.
Spoon on top of the cooled loaf and spread with an offset spatula. Allow the icing to set for at least 15 minutes at room temperature before slicing.
