Cinnamon Roll Filling:

  • 2 1/2 Tbs. melted butter or vegan butter
  • 5 Tbs. brown sugar packed
  • 1/2 Tbs. cinnamon

Cream Cheese Glaze (optional)

  • 2 Tbs. butter or vegan butter softened
  • 1 ounce cream cheese may use vegan cream cheese
  • 1 tsp. vanilla extract
  • 3/4 cup powdered sugar

Instructions

  • Prepare ½ of gfJules Gluten Free Pancake and Waffle Mix according to package directions (whisk 1 ⅔ mix together 2 eggs {or ½ cup applesauce}, 3 Tbs. oil & 1 ¼ cups milk).
  • In a separate bowl, whisk together the cinnamon roll rolling ingredients. Transfer to a small bag with a very small corner cut out.
  • If making cream cheese glaze, soften cream cheese and butter and stir together with sifted powdered sugar and vanilla in a separate bowl and set aside.
  • Preheat pancake and waffle maker with pancake plates. I didn't find it necessary, but if you prefer, lightly oil each plate, then add 3-4 Tablespoons of pancake batter to bottom plate. Squeeze a spiral of cinnamon filling onto the batter, then close the lid. Cook for approximately 4-5 minutes, or until fully cooked.
  • Lift pancake out and allow to cool slightly before serving, or if dressing with cream cheese glaze, allow to cool for at least 5 minutes, then drizzle with glaze. Repeat with remaining batter.
