Microwave Gluten Free S'mores Cookie Recipe

Craving a s'more but don't have a campfire? This 5 minute s'mores "cheat" will satisfy those tastebuds without all the hassle. Vegan and gluten-free, so you can share!

Instructions

  • To make s’mores cookies, spread melted chocolate onto the backs of pre-made gluten-free graham crackers and lay onto a wax paper-lined baking sheet, chocolate side up. (For instructions on making vegan milk chocolate, and how to melt chocolate in general, see my recipes for making chocolate or making chocolate bark).
  • Once all the crackers have a coating of chocolate, refrigerate or freeze until set, or if you're in a hurry, just keep going!
  • Use any remaining chocolate to make into bars, bark or as a dip.
  • Meanwhile, in a small glass bowl, microwave 2 vegan marshmallows at a time, for only 15 seconds or so (microwave strengths differ, so watch yours the first time you do this). Do not over-cook or they will explode and also harden more quickly, making it difficult to spread onto the graham crackers.
  • Remove the chocolate coated crackers and, working quickly, spread melted marshmallow onto a chocolate covered wafer with a knife, then top with another wafer. Set aside and continue to make more cookie sandwiches.
  • Two melted marshmallows should make approximately six cookie sandwiches.
  • Yield: approximately 40 sandwich cookies.
