So let’s get busy getting you solutions to your gluten free baking challenges! What’s perplexed you in the past? What have you heard ‘can’t be made gluten free?’ Jules LOVES hearing that. Quick story:
Jules was speaking at a national gluten-free convention, sampling her wares and selling her flour, too. Another (not-to-be-named) speaker was droning on (and on and on) about the ‘plight’ of the poor gluten free person, who just had to ‘admit, that there are just certain things that can’t be made gluten free.’ She went on (and on and on) listing one thing after another. You could see the collective spirit drain from the room. Heads dipping, shoulders drooping.
One of the ‘impossible’ things this ‘expert’ gave as a prime example, was baclava…that incredibly decadent, multi-layered labor-of-love dessert from Greece. WELL, unbeknownst to this speaker, Jules’ friend–and off-the-boat-Greek, had been making baclava for years–using ONLY Jules’ all-purpose flour! The story gets better! He’d heard Jules was making an appearance at this prominent show, and had volunteered to make a pan of this authentic Grecian dessert and have it overnighted to Jules so she could give out some very impressive samples during the show! And he did!
Well, as word spread of the hopelessness–the PLIGHT–of the poor, gluten-free souls sitting through this less-than-positive presentation, Jules and her crew caught wind of it. Jules’ husband flew back to the kitchen, whipped the still-boxed baclava out of the refrigerator, cut it into sample-sized pieces…and handed it out to everyone exiting the presentation!!!!! Needless to say, there was a long line at Jules’ table shortly thereafter, and Jules–true to her mission–re-instilled into everyone there, the hope to live and eat as normally as anyone. Instilling hope–unlike some other ‘notable figures’ in the gluten free community–is Jules’ mission. Make it yours.
Prove to your family that gluten free foods can taste as good (and many times better) than gluten-FILLED foods. You’ve had the muffins (or something else we trust proved gfJules’ worth to you). Now go fill a cart with all the other things you simply refuse to compromise on any more.
No more grit. No more nasty after-taste. No more compensating with extra oil or butter or sugar! Stop the madness.
