Fortune cookies have long been a beloved treat at the end of a meal, offering a delightful combination of crispy sweetness and a dash of mystery. For those of us living gluten free, however, their magic has been elusive. I’ve long pined for gluten free fortune cookies — such a simple pleasure — if only I could break into one again!

Fortune cookies are one of the unique treats that is almost more fun to interact with than to actually eat. But I’d still like to eat one again. Which is why I’m adding a Gluten Free Fortune Cookies recipe to my site, so we can all enjoy the fortune cookie “experience” again.

Making Gluten Free Fortune Cookies

It may surprise you to learn that the first fortune cookies weren’t actually Chinese, but Japanese, and were brought over at the turn of the century with immigrants coming to California for work. For various reasons, they were soon adopted by Chinese restaurateurs as well, and they morphed into the delightful vanilla-flavored after dinner treat we recognize today.

This gluten-free version is made with my reliable and grit-free gfJules Flour for perfect texture, and so that the delicate vanilla flavor shines through.

As for making the gluten free Fortune Cookies themselves, it is a bit of a time consuming process because you’ll need to bake them in batches of only two at a time. When they come out of the oven they are quite hot but you must work to shape them and insert the fortune while they are still pliable, so making only two ensures that the cookies don’t cool too much before you can work with them.

It is more efficient to have another pan baking while you’re shaping cookies that have already baked. I also recommend having a muffin pan handy to place the shaped cookies while they cool — it helps to hold their form until hardened.

When it comes to crafting the fortunes, the possibilities are endless! A surprise note offering “deep” inspiration, a funny prediction, or a simple bit of wisdom is always fun. You can also devise fortunes that are personalized for the recipient — perhaps a motivational quote — a whimsical prediction, or even a joke. Some classics include:

  • You are in good hands this evening.
  • There’s no such thing as an ordinary cat.
  • The austerity you see around you covers the richness of life like a veil.
  • Your first love has never forgotten you.

Gluten Free Fortune Cookie Recipe

Gluten Free Fortune Cookies Recipe

Cook Time: 11 minutes
Additional Time: 1 hour
Total Time: 1 hour 26 minutes

Perfectly crisp, light and sweet, these gluten free fortune cookies are a lucky treat, indeed!

Ingredients

Instructions

  1. Preheat the oven to 350°F. Prepare one or two baking trays by lightly oiling (coconut oil recommended). You can just oil two circles where you will be spreading the batter rather than oiling the whole tray. Have a muffin tin handy to place the cookies inside to cool once shaped.
  2. Place the egg whites in a large mixing bowl. Using a mixer, whip the egg whites until they form stiff peaks, about 2-4 minutes on high speed.
  3. Add the melted butter, sugars, vanilla, salt, and gfJules Flour. Mix just until a thick batter forms. It should be similar to vanilla cake batter.
  4. Place a heaping teaspoon of the batter on each oiled spot on the baking tray. Spread the batter into a round that is about 3” in diameter using the back of a spoon or an offset spatula. The rounds should be very thin.
  5. Bake the cookies for 10-12 minutes on the top rack of your oven. The cookies should be generously browned around the edges.
  6. Remove the pan from the oven, and run a thin-edged spatula around each cookie to loosen it from the pan.
  7. Place a fortune in the middle of the cookie circle. Work quickly to fold the circle in half over the fortune, then bend the upper and lower points of the half circle towards each other. Bending the cookie over the lip of a bowl can be helpful.
  8. Place the shaped cookie in a muffin tin to help it harden in the proper shape. Repeat with the other cookie circle.
  9. Repeat steps 4-8 until all the cookies are made. For best results, rotate two or three pans so you don’t have to make new cookie rounds on pans that are hot from the oven. Re-oil each pan before making new cookie rounds on them.
  10. Allow the shaped fortune cookies to cool and harden for 1 hour before serving. Dip in melted chocolate and sprinkle with gluten free sanding sugar or sprinkles, if desired. Store fortune cookies in an airtight container at room temperature.
