Ingredients

  • 2 egg whites or egg substitute room temperature (4 Tbs. or 1/4 cup whites)
  • 2 Tbs. extra virgin olive oil
  • 1/2 tsp. apple cider vinegar or lemon juice
  • 1/4 cup warm water
  • 2 1/4 tsp. rapid rise yeast 1 packet – included with pizza crust mix **for yeast-free see note
  • additional olive oil to brush onto the rolls
  • pizza sauce use my homemade recipe & toppings of choice (dairy-free cheese recommendations here)

Instructions

  • Bring all ingredients to room temperature. If warming egg whites, place whole eggs in a bowl of very warm water for a few minutes while gathering other ingredients.
  • Whisk together dry ingredients except yeast; set aside.
  • In a large mixing bowl, combine egg whites, olive oil, cider vinegar.
  • Using a stand mixer (preferably), slowly add in the dry ingredient mix.  Gradually add water or club soda (for yeast-free) to get a firm but very sticky dough that can still be spread.  If using yeast, pour in the yeast packet and beat on high for an additional 2-3 minutes.  (Note: this recipe may be mixed by hand in a large bowl, using a fork or wooden spoon).

  • 1- Liberally dust a clean counter or pastry mat with gfJules™ Flour.
  • 2- Turn the dough ball out onto the floured surface and then roll gently to cover all sides so it’s not so sticky.
  • 3-4 Gently roll the dough out in every direction to 1/8-1/4 inch thick.
  • 5- Spread with pizza sauce to the edges of the dough.
  • 6- Sprinkle toppings all over the dough.
  • 7- Using a bench scraper or a spatula, begin rolling the dough from one side to the other to form a log.
  • 8- Cut each roll approximately 2 inches across.
  • 9- Lift each roll using a scraper or spatula and place in an oiled baking pan. Makes approximately 6 rolls.
  • Cover with foil and place in a warm oven (preheated to 175ºF then turned off works well) for 15-30 minutes
  • Brush rolls with olive oil to remove excess flour and also help them to brown lightly during the bake.
  • Preheat oven to 425ºF and bake covered for 10 minutes. Remove foil and bake another 5 minutes. Top with additional sauce before serving, if desired.

Notes

** For Yeast-Free, discard yeast packet if using gfJules Pizza Crust Mix. Add 1 Tablespoon baking powder & 1 heaping teaspoon baking soda. Use 1/4 cup club soda instead of water.
