Apple Butter & Sriracha Marinade

School’s almost out, the days are growing longer, and the call of the grill on a warm evening seems louder than ever. Just to be outside cooking is a thrill, but the flavors from the smoke and flame go hand-in-hand with my idea of the perfect gluten free summer meal. For my first grilling recipe of the summer, I’ve paired the surprising tastes of two of my favorite but polar opposite cooking sauces (that also happen to be naturally gluten free): sweet apple butter and spicy Sriracha — this apple butter and sriracha marinade is something special!

This homemade hot and sweet marinade would make anything on the grill scream with flavor and the sugars help to caramelize protein or veggies for delicious intensity around the edges.

Apple butter siracha marinade

Apple Butter & Sriracha Marinade

Ingredients

Spicy Apple Butter & Sriracha Marinade

  • 1/2 cup apple butter
  • 2 Tbs. Sriracha
  • 1/2 Tbs. fresh lime juice
  • 1 Tbs. avocado oil (or other high heat oil of choice)
  • 2 lbs. protein or vegetables of choice to grill
  • Lime wedges for garnish
  • Fresh cilantro for garnish

Instructions

 

Whisk together ingredients in a small bowl. Brush on shrimp, scallops, chicken, etc. Place on oiled platter, cover and refrigerate until ready to grill.

Preheat grill to medium/high (approximately 400°F). Cook prepared protein or vegetables directly on grill grate or in a platter, as pictured above.

For shrimp and scallops, grill for 3-5 minutes, turning once, or until slightly opaque. Shrimp should be pink.

For fish or chicken, grill approximately 10 minutes, turning once, or until fish is flaky and chicken is no longer pink.

Garnish with lime wedges and cilantro, if desired.
