Gluten free granola is a wonderful breakfast, but don’t overlook it as a nutritious recipe ingredient!

In this recipe, for example, the addition of Maple-Walnut Granola transforms an ordinary oatmeal-raisin cookie into a scrumptious treat with a little crunchy something extra!

For those of you who don’t do nuts or prefer other flavors, make your favorite kind of gluten free granola using my base recipe for homemade gluten free granola with apple butter! These are my preferred gluten free oats — they’re purity protocol, organic and instant for a softer texture in cookies.

If you now feel a little better about having cookies for breakfast, then I’ve done my job. Enjoy!

Gluten Free Maple Walnut Granola Cookies

Ingredients

Instructions

Preheat oven to 350° F.

Beat together butter and sugars in a large mixing bowl until light.

Stir in eggs and maple syrup until well mixed. Slowly add dry ingredients, crushing any large clusters of granola before adding. Stir in nuts and raisins.

Scoop tablespoon-sized balls of dough and place 2 inches apart onto parchment-lined baking sheets.

Bake until lightly browned and puffy – approximately 10 minutes. Remove to cool on a wire rack.

Makes: approximately 50 cookies.

  2. walnuts are high in iron, manganese, magnesium, copper, Vit B and especially omega 3 fatty acids…..making me crave them!

  5. I would sprinkle some Kind granola on a mixed greens salad with sliced strawberries, blueberries, and a drizzle of vinegar. Yum! Who needs croutons?

  6. Hey Jules! I follow you on all your boards! I love this flour- and I LOVE oatmeal raison walnut cookies and haven’t made them since going GF.. So this is so awesome! I am not much of a baker- but I try – I would use these in stuffing as well or an appetizer – some kind of a meatball with a great dip! Finger foods are always fun … but what a great cake topper for a pound cake put this on the bottom before the batter with some honey or something sticky and then put the cake on top and bake! I’ll let you work out the details! Also make your own granola bars with this mix! Top a meat loaf for some surprising crunch and sweetness! So many options! As far as the Walnuts go amazing for your body- great fat, antioxidants you can even rub them on your table for a nice sheen- walnut oil is great !

  7. According to Joe Vinson of the University of Scranton in Pennsylvania, walnuts rank above peanuts, almonds, pecans, pistachios and other nuts. A handful of walnuts contains almost twice as much antioxidants as an equivalent amount of any other commonly consumed nut.

    As far as consuming the Maple Walnut Cluster granola, I want to try the cookies, I would also eat it with my coconut-based yogurt, or with almond milk, or “smash” it up and mix it into my crumb topping for a fruit crisp.
