You may have seen my recipe for a gorgeous gluten free fruit pizza made with all sorts of colorful fruits, but this one is single-minded. In this case, focusing on fruits of the red, white and blue variety for a Gluten Free Sugar Cookie Flag Fruit Pizza!
You can make this recipe into any flag, of course. One year, I even made a maple leaf evoking the Canadian Flag and it turned out quite well!
In this photo, I used my grain-free Nada Flour to make the cookie entirely grain-free, and no one was the wiser!
I’m focusing on the American flag here because it’s July 4, but really, feel free to make any flag you’re feeling particularly patriotic for. Just pick the fruits that bring out those flag colors!
I could have chosen cherries or raspberries instead of strawberries, and they are arguably even easier to arrange, but somehow I usually end up using strawberries for my gluten free sugar cookie flag fruit pizza. You do you, though!
Blueberries are a natural for the blue color, but if you find some particularly blue fill-in-the-blank-other-berry, go for it!
Just be sure to wash your berries well before decorating your pizza. Even if you buy organic, it’s always best to wash berries, not just to remove any residual pesticides, but also to help them stay fresh longer by removing bacteria and killing the spores that cause mold. By keeping mold spores at bay, vinegar can prolong the life of your produce.
I use a simple 3 cups water : 1 cup white vinegar soak for 5 minutes or so before rinsing. Lay the berries out on towels on the counter to dry before using in this flag fruit pizza recipe or before storing in the fridge. This way, the berries will not only be clean, but will go longer without molding.
You can make your gluten free Sugar Cookie Flag Fruit Pizza any shape you like, but you’ll likely be left with extra dough, no matter what you do. My from-scratch recipe and my gfJules Cut-Out Sugar Cookie Mix both make plenty of dough! Grab your favorite cookie cutters and make a few extra cookies on the side!

How to Make a Gluten Free Sugar Cookie Flag Fruit Pizza
The shape and size of your sugar cookie flag really don’t matter, but the thickness of the dough does. Roll the dough to about 1/4-inch thick and roll it out onto parchment or an oven-safe silicone baking mat for easiest transfer onto a baking sheet. Bake only for about 13-14 minutes. You’ll know it’s done when there are no translucent looking, uncooked areas in the cookie. Don’t wait for the edges to turn brown or look crispy.
Once removed from the oven and left to cool, you can start to prep your fruits and make your yummy cream cheese frosting. This is not a typical “frosting” in that it’s not super sweet, but I really don’t know what else to call it. Perhaps it’s just more of a “topping,” but whatever it is, it’s truly the icing on this cookie! It’s not to be missed!
I’ve made my recipe entirely vegan/dairy-free, but feel free to use dairy-full options. I have a homemade version of coconut whipped cream which is amazing, or you can opt for store-bought CocoWhip or TruWhip which I’ve found at many regular grocery stores lately. Also cans of almond whipped cream are more widely available.
The decorating part is fun, and where you can really get creative. My gluten free Sugar Cookie Flag Fruit Pizzas aren’t fancy, but you can definitely tell what they are, so don’t feel intimidated if you don’t think you’re great at decorating! It’s all about the taste, anyway!

Gluten Free Sugar Cookie Flag Fruit Pizza
Soft and irresistible, this giant gluten free sugar cookie Flag Fruit Pizza is the perfect way to celebrate patriotic holidays, deliciously!
Ingredients
OR
- 2 1/4 cups gfJules® All-Purpose Gluten-Free Flour OR 248 grams gfJules Nada Flour**
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup granulated cane sugar
PLUS:
- 1/2 cup (8 Tbs) butter or vegan butter (I use Earth Balance® Buttery Sticks) OR vegetable or palm oil shortening OR coconut oil (not melted)
- 1 egg or egg substitute (e.g. prepared like Ener-G Egg® Replacer)
- 1/4 cup + milk (dairy or non-dairy) -- add slightly more if necessary to keep dough together without being crumbly
- 1 teaspoon pure vanilla extract (not necessary if using gfJules® Sugar Cookie Mix)
Topping ingredients:
- 1 cup (8 ounces) cream cheese, softened (like Go Veggie™ Cream Cheese Alternative; Tofutti® Better than Cream Cheese; or Daiya™ Cream Cheese Style Spread — dairy & soy-free)
- 1 cup homemade coconut whipped cream OR store-bought whipped cream, dairy or vegan*
- 1/2 cup sifted confectioner's sugar
- Fresh fruit (berries, vegan white chocolate chips, etc.)
Instructions
- Preheat oven to 375ºF (static) or 350ºF (convection).
- Cream butter and sugar (or half of gfJules Sugar Cut-Out Cookie Mix) until very fluffy.
- Add egg (or egg replacer), vanilla extract and milk, beating until integrated. Add the remaining mix or dry ingredients last, beating just until dough is holding together. Add slightly more milk if needed to keep dough from being crumbly.
- Gather dough and form a flat disc.
- Dust a silicone baking mat or parchment paper taped to your counter with gfJules™ All-Purpose Gluten-Free Flour. Dust a rolling pin and cookie cutters with Jules Flour as well. Roll the dough from the center in each direction to form a circle at least 12 inches across and 1/4-inch thick (see photo of cut cookie for appropriate thickness).
- Using a butter knife or pastry cutter, cut the uneven edges of the rolled dough off so that you are left with a clean rectangle or circle of dough. Gather the cut off edges of the dough together and re-roll on a separate piece of parchment, then use cookie cutters to make cookies with remaining dough.
- Slide the parchment or silicone baking mat onto a flat cookie sheet. Arrange any cut cookies on a separate baking sheet lined with parchment. Bake cookies for 8–10 minutes, but remove before they begin to brown at the edges. Bake the large flag cookie for 13-14 minutes – the dough should still be soft, not browned or crispy.
- Remove to fully cool on a wire rack.
- Prepare homemade coconut whipped cream, if using, then beat together with the softened cream cheese and confectioner's sugar using the whisk attachment of an electric mixer. Whip until light and the cream cheese is integrated without any lumps.
- Spread generously on top of cooled cookie, leaving a slight crust edge of the cookie exposed.
- Wash and cut fresh fruit and arrange on top of the pizza however you like.
- Cover and refrigerate topped pizza until ready to serve.
