Grated Gluten Free Sweet Potato Casserole

You might be asking why I now have two published gluten free sweet potato casserole recipes, when my other recipe is called “Favorite Gluten Free Sweet Potato Casserole.” Is this grated gluten free Sweet Potato Casserole less of a favorite?

Well, in short, it’s actually my other favorite gluten free sweet potato casserole. 

They’re both good enough to eat for breakfast (yep, done that), but they’re totally different from one another in one major way: this one is made with grated sweet potatoes and the other with mashed, cooked sweet potatoes. The end result is a distinctly unique texture for each that I can’t choose between, nor should I! When they’re both this good, it’s nice to have choices.

This grated version is similar to a recipe my mother made all my life and I remember fondly, which is why I was happy to be able to bring it back and share it with you! Other than making it dairy-free, the only other real change I’ve made is to substitute my gfJules Flour for regular wheat flour. It DOES make a difference what gluten free flour you use.

My gfJules Flour is light and clean tasting without any grit; if you use brown rice flour blends or bean flour blends or anything with a funky taste or texture, your gluten free sweet potato casserole will taste funky or have an odd texture too. So just don’t. Your sweet potato casserole is worth using the best flour, don’t you think?

Whichever gluten free sweet potato casserole you decide to make first, I highly recommend trying them both so you can see which your family prefers — or maybe you’ll rotate back and forth between recipes like we do. Thanksgiving is the perfect time to experiment because I never heard anyone complain that there were too many sweet potato choices!

For this recipe, all you’ll need are a few simple ingredients you probably already have at home, plus sweet potatoes, of course! I suggest using a food processor like this Cuisinart, as grating sweet potatoes by hand is not my idea of a fun way to spend some time in the kitchen. I’m also totally paranoid of scraping my knuckles off! But maybe that’s just me ….

Surprisingly, the six cups of grated sweet potato needed for this recipe can be derived from just one large sweet potato. Of course, all sweet potatoes are different sizes, so you may want to have another on hand just in case, and always measure before adding when it comes to fruits, veggies and squash called for in recipes. 

Follow the simple recipe below to mix the ingredients, then pour into your favorite 9×13 baking dish.

Then bake in your preheated oven for about 50 minutes, and it’s ready to enjoy!

Gluten Free Grated Sweet Potato Casserole

Cook Time: 50 minutes
Total Time: 1 hour 5 minutes

This grated gluten free sweet potato casserole is the perfect addition to your Thanksgiving meal or to any fall menu. With plenty of cinnamon and spices plus a few ingredients you probably already have on hand, you can have this dish on the table in about an hour!

Ingredients

  • 1/2 cup butter or vegan butter, melted
  • 6 eggs, beaten
  • 1 1/4 cup granulated sugar (may reduce or increase, if preferred)
  • 2 cups milk of choice, dairy or non-dairy
  • 7 Tablespoons (just under 1/2 cup) gfJules Gluten Free All Purpose Flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon allspice
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 6 cups shredded, peeled, uncooked sweet potatoes

Instructions

  1. Lightly oil one 9x13 pan and set aside.
  2. Preheat oven to 350F.
  3. Peel then grate sweet potato to measure 6 cups.
  4. In a large mixing bowl, whisk together eggs, sugar and milk. Stir in melted butter.
  5. In a separate bowl, whisk together gfJules Flour with spices and salt.
  6. Add flour mixture to milk mixture, whisking or beating until totally integrated.
  7. Stir in grated sweet potatoes, then pour into the pan before the sweet potatoes sink to the bottom of the bowl.
  8. Bake for approximately 50 minutes, or until it is no longer jiggly in the middle of the casserole and a knife or toothpick inserted into the center comes out clean.
  9. Turn oven off and open oven door to allow casserole to cool slowly before serving.
