TJ says,
This dough is super easy to work with!We have found the thinner we roll the dough the better we like it for steamed or pan-fried dumplings. For crab rangoon, etc. we’re okay with the dough being a bit thicker. These are pork and chive. We also do veggie, shrimp, etc.The key is to make sure the veggies (cabbage, zucchini, etc.) are salted and *all* excess liquid is squeezed out. Same goes for tofu. Cheesecloth is your friend.

The gluten free wonton wrapper you've been waiting for! Read the comments ... please use gfJules Flour for best results!
Ingredients
- 1 cup (135 grams) gfJules Gluten Free All Purpose Flour
- ¼ tsp. sea salt
- 1 egg + 1 egg white
- 2 Tbs. water
Instructions
Whisk together flour and salt in a small bowl; in a separate bowl combine the eggs and water. Slowly stir the egg mixture into the flour with a fork and mix until a sticky dough forms.
Divide the dough in half and cover one half while working with the other.
Prepare a clean counter or pastry mat by generously flouring with more gluten free flour. Flour a rolling pin as well, then turn one half of the dough out onto the floured mat and roll gently in each direction until the dough is evenly thinned, almost so thin you can see through it.
Measure 4 ½ - 5 inch squares and cut with a pastry cutter or butter knife. Layer each square on top of each other on a plate and cover with a damp tea towel while preparing the remaining dough. Re-roll the dough scraps to create more wrappers, so that all the dough is used to make approximately 10 wonton wrappers.
Use wrappers in your recipe before they dry out, or cover and refrigerate for 3-5 days until ready to use in your recipe. They will get somewhat more fragile with refrigeration, so bring to room temperature before rolling and spritz with more water if necessary.
Makes 10 wonton wrappers; recipe is easily doubled.
Pin for later!
Looks great.m and I can’t wait to make them for my niece. Do these wrappers freeze well ? I was going to prepare wontons and then freeze them. Thank you !
They should, just put parchment between each wrapper so they are easy to separate.

Thanks for the recipe! I made it tonight using King Arthur flour. It worked well enough for a deconstructed wonton soup, but it was so, so sticky, and I couldn’t get them thin enough. I wish I’d read the comments first! I’m looking forward to trying again with your flour. Can you provide the weight measurement?
Hi Romi, yes this recipe seems to really be amazing but only with my gfJules Flour. I’ve added the recipe weight for you!

Didn’t work well with King Arthur GF Flour. Was more like pie crust even though I rolled it out very thin. So much so that the egg roll wrapper broke when I rolled it up. Oh well. Wish GF flours were more forgiving. So no egg rolls for me tonight.
Hi Kathy, you’re right that gluten free flours are different. You can find out more about why gluten free flour blends are different in this linked article. Don’t give up on this recipe, though. I’m sure you can see from the reviews and from the photos that this is a great gluten free wonton wrapper recipe! The reason it works well is because my gfJules Flour is light and fine but also strong and has stretch to it that allows it to be rolled thin, where other gluten free flours just break and crumble. It really makes a huge difference and allows recipes like this to be delicious successes!

I tried this recipe twice and it was excruciatingly frustrating to work with.
Dough was extremely sticky & no matter how much flour I used on my cutting board to roll it out, it would just keep sticking. The more flour I used, the last elasticity the dough had. Just an overall frustrating process.
Hi Taylor — sorry to hear about your frustration. Were you using my gfJules Flour? I’ve never experienced that with my flour and this recipe — the dough is always super easy to work with. Check out this article on measuring flour to be sure that your proportions were right in the recipe, as well.

Could this dough be rolled out with the a pasta machine. Thanks.
Hi Sylvie, yes, you should be able to do that with this recipe since it has the eggs in it. I don’t like using a pasta machine with my gluten free ravioli recipe (egg-free) but I’ve had good success with my other pasta and pasta-like recipes which do contain eggs. Enjoy!

For gf wonton wrappers, can you use an egg replacer ? If so which one ?
Hi Susan, I’d recommend trying aquafaba or one of the commercial egg replacers that’s out now. You can check my article on vegan egg replacers for some ideas!

This is a great gluten free wonton wrapper recipe! I made it tonight and it was really easy to follow. Thanks for sharing!
So glad you tried the recipe and found that it worked so well for you – that is fantastic!!!! Thanks so much for letting me know!

Tried this to make gf Pelmeni, Russian dumplings. The dough was not as elastic as it needs to be, any ideas on how to adjust to make it that way? It’s a family staple and haven’t tried to make these since our celiac diagnosis this June.
When the dough isn’t as elastic as it ought to be, it’s usually because there’s not enough liquid in the dough. You can either try adding a bit more liquid, or switch to another recipe like my recipe for gluten free pierogi or gluten free ravioli dough. Check out those and see if either looks more like the Pelmeni recipe you’re used to.

Very good recipe. Thank you so much.
I’m so happy you loved it, Elena! Thanks for taking the time to let me know!!

Wonton Soup
Hi I’m really excited to try these out! How do they hold up in soup? Would love to add them to wonton soup
Hi Celeste, I’ve heard rave reviews from others who have used this recipe for wonton soup, so fingers crossed it will work for you, too!!
~jules
I am dreadful with a rolling pin but these were surprisingly easy to make! I fried then steamed them and they were delicious! Another winner!
Oh Rebecca, that is so wonderful!! I’m thrilled that you went for it, despite your fear of rolling pins – lol! You were apparently rewarded with delicious gluten free wontons, so I hope this will translate into many more rolled dough recipes for you!!!
~jules
Is there a way to make these without eggs?
Hi Rebecca, you can try them with aquafaba as the egg substitute. I haven’t made them that way yet, but that’s what I would try first.

Another home run recipe! These were unbelievably easy to make and roll out and so delicious. Your recipes never fail. Thanks so much for a great flour.
So glad to hear it, Cheryl!!! I’m glad you tried the recipe, as I think a lot of people are daunted just by the thought of making their own gluten free wonton wrappers, but they’re actually so easy to make with my flour and recipe! Thrilled that you have another fun recipe to use anytime you are craving wontons, egg rolls, dumplings and potstickers!!!
~jules
