I’ve been baking all kinds of gluten free breads and rolls for years, but for some reason had never put pen to paper to write a legit gluten free popovers recipe. I’m not sure what took me so long, as these lovely dinner rolls are a classic that truly deserves its place at the gluten free table.

What is a Popover?

You might wonder what the difference is between a popover and an ordinary, albeit tasty, dinner roll. Great question!

Much of the secret lies in the pan — I highly recommend you have one of these special popover pans before you attempt to make a true popover — as they support the exaggerated height of these rolls as they bake. Coupled with the extra wet dough which creates surplus steam during baking, they tend to puff up at the top and then, yep, you guessed it, pop over.

Popovers are actually an Americanized version of the famous British Yorkshire pudding (to the uninitiated, a British “pud” is not an American liquid-y pudding at all. It’s like a popover!).

Yorkshire Puddings are savory breads baked in regular muffin pans which are typically greased with fat. You’ll often find them alongside roasted meats and graciously soaking up gravies. They’re an integral part of British culinary history, dating back to the 1300s.

American popovers are a touch sweeter because the pans are greased with butter instead, and they are often served with butter or preserves, and of course, are baked in the tall, cylindrical pans pictured here.

Although no one knows for sure, speculation has it that popovers were created by accident, when some early New Englanders were making Yorkshire puddings and added too much liquid to the recipe, causing a higher hydration ratio and excess steam, leading to the “popover!”

Both Yorkshire puddings and American popovers are made from flour, salt, eggs, milk, and butter. My recipe for gluten free popovers is of course made with gfJules Gluten Free All Purpose Flouronly the best will do, lest you wind up with flat, dense, and gritty not-popovers. I’ve also made the recipe dairy-free, but feel free to use regular butter if you are able.

And for those wanting to make a gluten free Yorkshire pudding, I have it on good authority that using my gfJules Gluten Free All Purpose Flour and your family’s own recipe, it will turn out like a “proper pud!”

Gluten Free Popovers Recipe

Gluten Free Popover in Pan

Gluten Free Popovers

Yield: 6 gluten free popovers
Prep Time: 20 minutes
Cook Time: 40 minutes
Total Time: 1 hour

Light and airy and as tall as any good popover, just gluten free!

Ingredients

Instructions

  1. Preheat the oven to 450°F. Make sure one of the racks in your oven is positioned in the lower third of the oven and the top rack is as high as it can be so that your popovers have plenty of room to ‘pop’.
  2. Place 1 teaspoon of butter in each popover cup of a 6-cup standard popover pan. Place the popover pan on a baking sheet and place it in the oven.
  3. In a blender, combine the eggs and warm milk. Blend until frothy.
  4. Add the flour, salt, and remaining 3 tablespoons of melted butter. Blend for another 30-60 minutes until the batter is smooth and no clumps of flour remain.
  5. Remove the hot popover pan from the oven and divide the batter evenly between the 6 popover cups. Smooth the tops with a rubber spatula. The batter should fill each cup about ¾ of the way.
  6. Bake for 20 minutes. Without opening the oven door, reduce the temperature to 350°F and bake the popovers for 10-15 more minutes. The popovers should be nicely browned.
  7. Remove the popovers from the oven and serve immediately!
