The egg gives stability where the vegan substitute doesn’t hold up as well. What it lacks in looks, it makes up for in taste though, especially if you use coconut oil as the oil here –mmmmmm.
I recommend mixing the ingredients in a separate bowl, then transferring to your mug or small casserole if you’re planning on sharing just so you can be sure it’s all mixed well. 5 Minute Microwave Gluten Free Banana Bread Mug Cake
This delightful gluten free Banana Bread is made in a mug, in your microwave, in only 2 minutes' time. Add another 3 minutes to mix it up with a fork, and you have a mug cake in 5 minutes!
Ingredients
- 1 mashed over-ripe banana
- 1 large egg (or 1 Tbs. neutral cooking oil like melted coconut oil + 1 Tbs. dairy or non-dairy milk)
- 1/4 cup (55 grams) gfJules Gluten Free Pancake & Waffle Mix
- 2-3 Tbs. chopped chocolate, chocolate chips, nuts, &/or berries (optional)
- cinnamon-sugar to sprinkle on top (optional)
Instructions
- Lightly oil a large mug -- one that holds at least 12 ounces -- or a small 1-quart casserole.
- In a separate bowl, mash one banana. Add egg or substitute, and mix well. Stir in measured gfJules Gluten Free Pancake & Waffle Mix until integrated. Add any mix-ins.
- Transfer to prepared mug or casserole.
- Microwave on high for 2 minutes (*microwaves differ in strength, so you may need slightly more or less time, so watch while cooking the first time to be sure it's done and not over done). When cooked, the cake will rise up to the top, or potentially above the mug, pull away slightly from the sides, and a toothpick inserted into the center will come out with some dry crumbs but not be wet.
- Remove and allow to cool for a few minutes before enjoying. Sprinkle cinnamon and sugar on top, if desired. The cake may collapse some, especially if making vegan or if you open the microwave to test before it is completely cooked.
Notes
Yes! You can bake this Mug Cake in the oven instead, just make sure your mug or casserole is oven-safe. You'll bake at 350F for approximately 25 minutes for the mug, less for the casserole, so keep a close eye on it!

Hi Bonnie, if you look in the intro to the recipe, I mention how to do this. Just hop to this from-scratch recipe to make a “mix” with my gfJules Flour instead. You’ll have plenty of mix, since you’ll only need 1/4 cup for one mug, so maybe keep it in a bag and you can make more mug cakes later!
