Use any fresh or frozen berries, but raspberries, blackberries or strawberries work best. Strain through a fine sieve if you like your coulis super smooth, or leave some berries whole for texture – you choose!

Berry Coulis Dessert Topping

Yield: 2 cups
Prep Time: 15 minutes
Total Time: 15 minutes

This simple berry coulis dessert topping makes everything from ice cream to chocolate pie just that much better!

Ingredients

  • 2 cups fresh or frozen berries, rinsed
  • 1/2 cup granulated sugar or coconut palm sugar
  • 1 Tbs. lemon juice

Instructions

  1. Clean fresh fruit, then add to a medium-sized saucepan together with sugar and lemon juice. Bring to a low boil over medium-high heat, stirring constantly.
  2. It's all about the sugar dissolving, so if it's not dissolved yet, reduce heat to a simmer and keep stirring until no longer crunchy -- in other words, until there are no sugar crystals left.
  3. If you prefer your berry coulis chunky, the consistency may be perfect for you at this point; otherwise, press gently through a sieve or transfer to a blender.
  4. If blending, purée until smooth, strain seeds (if desired), then set aside to fully cool before storing.
  5. Coulis stores well in a sealed container in the refrigerator for 1 week.

      Regarding this berry coulis recipe, it’s really all about getting the sugar crystals dissolved, so if after the quick boil the sugar isn’t totally dissolved, reduce to a simmer and keep stirring until you don’t hear any more “crunching” from the sugar. I’ve added more details in the recipe to make this more clear. Thanks for your question!!!
