I see you, chocolate chip cookie lover. And I know that you are going to start questioning your allegiances to ordinary chocolate chip cookies once you’ve tried this gluten free Chocolate Chip Skillet Cookie.

Because you see, this is no ordinary chocolate chip cookie. It’s a gooey, chewy, giant, thick gluten free chocolate chip cookie served warm right from the skillet. With ice cream, no less. 

How can it get any better?

Well, I’ll tell you how. It gets better because this recipe only calls for 5 ingredients and it’s mixed and in the oven in about 5 minutes. Hot out of the oven and begging for ice cream in 25 minutes, so craving-to-satisfied in 30 minutes total!

THAT’s how you top ordinary chocolate chip cookies. BOOM!

The sublime simplicity of this recipe comes from using my gfJules Gluten Free Cookie Mix, but if you are fresh out (you know, from making all those delicious, previously your favorite single-serve chocolate chip cookies), just hop over to my from-scratch recipe to make this dough using my gfJules Flour, then bake according to these skillet cookie directions below.

It’s such an easy switch — just use applesauce in place of egg! But of course if you want to use eggs instead, feel free! Both options are given in the recipe, so you choose!

To recap how easy this recipe is to make, simply dump these ingredients into your mixing bowl:

Then spread in an oiled or parchment-lined skillet.

I like using parchment because it makes for easier clean-up, and also if your skillet is used for other things, you never have to worry about cross-contact with gluten or about your sweets absorbing savory spices.

Bake for 25 minutes or so at 350 F and out comes the most delicious, most delectable gluten free Chocolate Chip Cookie Skillet Cookie imaginable.

And the best part is that you don’t have to wait for it to cool much to eat it. Just dig in with a fork!

I love sprinkling the top with some sea salt flakes, but that’s totally optional. Although I do recommend you give it a try — truly next level. Salty and sweet is just the best!

Gluten Free Chocolate Chip Skillet Cookie

Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes

Truly decadent, sublimely simple gluten free chocolate chip skillet cookie. From craving to satisfied in under 30 minutes!

Ingredients

Instructions

  1. Preheat oven to 350F.
  2. Add half of gfJules Cookie Mix to mixing bowl with cubed butter and oil, mixing slowly to incorporate until smooth. Add eggs or applesauce and remaining mix, beating until lighter and a dough is formed, approximately 1-2 minutes. Stir in chips.
  3. Oil or line oven-safe skillet with parchment paper and transfer dough to prepared skillet. Smooth top of dough with rubber spatula.
  4. Bake on center oven rack for approximately 25 minutes, testing with a toothpick and removing skillet cookie when toothpick has only dry crumbs and the top of the cookie is lightly browned. Begin testing after 20 minutes to be sure not to over-bake your cookie, since all ovens differ somewhat in bake times, and your skillet may be larger or smaller than the one pictured (10 inches).
  5. Remove to cool slightly before eating. Sprinkle with sea salt flakes, if desired.
