If you’ve ever driven through Texas, chances are you’ve spotted a bakery or gas station proudly selling fresh, warm klobasniky (klobasniki). These savory Czech pastries, often called kolaches, are actually a cousin to the sweet-filled version (check out my gluten-free recipe for sweet kolaches!). While kolaches are traditionally filled with fruit, cheese, or poppy seeds, klobasniky (pronounced klo-bah-sneek) are stuffed with savory fillings—most famously, smoky sausage.
Czech immigrants who settled in Texas in the 1800s brought both styles of pastries with them, and over the years, klobasniky became a Lone Star State staple, especially in towns like West, Texas, which is known as the “Czech Heritage Capital.” Today, Texans cherish these handheld pastries for breakfast, lunch, or road-trip fuel, and they’ve embraced them as their own.
This gluten-free klobasniky recipe brings this iconic Texas tradition to your kitchen without all that pesky gluten and dairy. Made with my soft, fine gfJules Gluten Free All Purpose Flour, the dough for these pastries bakes up light, tender, and never gritty—just like the originals. And because my flour gives doughs like these S T R E T C H, it’s easy to wrap around whatever fillings you like without cracking and breaking.
For this recipe, the rolls cuddle savory sausage, creating the perfect portable meal or snack. But you could use hot dogs (old-school pigs in a blanket!), shredded meats, or even leftovers. And of course you could make these hot pockets vegetarian!

Gluten Free Klobasniky – Texas Sausage Kolaches

- ¼ cup milk or non-dairy alternative
- 2 Tablespoons yogurt like SoDelicious coconut yogurt
- 2 ¼ (314) cups (grams) + 1 Tablespoon gfJules All-Purpose Gluten Free Flour
- ½ teaspoon salt
- ¼ cup milk powder dairy or non-dairy like coconut
- ¼ cup + 2 Tablespoons granulated sugar
- 1 Tablespoon quick rise yeast like Red Star
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- 3 large eggs room temperature (or vegan egg substitute)
- 1 teaspoon pure vanilla extract
- 8 Tablespoons butter or non-dairy alternative very soft but not completely melted (like Miyoko’s plant milk butter)

Instructions
- In a small saucepan, heat the milk and yogurt until it reaches 95-110°F.
- While the milk and yogurt are warming, place the flour, salt, milk powder, sugar, yeast, baking powder and soda in the bowl of a stand mixer. Mix on low with a paddle attachment to combine.
- Add the warm milk/yogurt mixture, eggs, and vanilla. Turn the mixer on low and add the very soft butter. Mix the batter on low for 1-2 minutes. Scrape down the sides of the bowl and continue to mix the dough on medium-low for 2-3 more minutes.
- Line a baking sheet with parchment paper.
- Cover the prepared dough and allow it to rise for 30 minutes.
- Preheat the oven to 375°F.
- Divide the dough into 7 portions. Lightly flour a work surface.
- Roll each dough portion out into a rectangle that is about ¼” thick and long enough to fit the hot dogs/sausages that you are using.
- Place a hot dog/sausage in the center of the rectangle along with 1-2 tablespoons of shredded cheese. Fold the dough around the hot dog/sausage, making sure to tuck in the ends. The entire hot dog/sausage should be enclosed in the dough.
- Place each savory kolache on the baking sheet with any seams facing down.
- Brish the kolaches with melted butter and sprinkle with garlic salt if desired.
- Bake for 30-40 minutes or until the dough reaches an internal temperature of 195°F. Allow the kolaches to cool for 10 minutes before serving.
