This healthy gluten free apple bread recipe uses probiotic-rich Greek or non-dairy yogurt in place of lots of oils and butter. Healthy Gluten Free Apple Bread Recipe
- 8 oz Greek or non-dairy yogurt
- 1 cup unrefined coconut palm sugar or white cane sugar
- 2 eggs (or substitute)
- 1 Tbs. pure vanilla extract
- 2 cups gfJules™ Gluten Free All Purpose Flour
- 2 tsp. baking powder
- ½ tsp. baking soda
- ¼ tsp. sea salt
- 1 ½ cups tart or semi-sweet apples, peeled & finely chopped
- ¼ – ½ cup chopped pecans (optional)
Preheat oven to 350º F.
Combine yogurt, sugar, eggs and vanilla extract. Next stir in gfJules flour, baking powder, baking soda and salt, mixing well. Finally add finely chopped apples and pecans, if using.
Spoon the batter into an oiled 9 x 5 inch loaf pan sprinkle with another quarter cup of pecans if like.
After baking 45 minutes cover the bread with aluminum foil to prevent the pecans from burning if you included them on top. Bake an additional 15 minutes or until a wooden pick inserted into the center comes out clean.

I just made this in my bread machine. I substituted 1/8 c. applesauce and 1 flaxseed “egg” for the 2 eggs. I added cinnamon, nutmeg, allspice, ginger and cloves. I also substituted 1/2 c. honey& molasses for the sugar since I reduced the applesauce for 1 egg. I didn’t want to overdo the wet ingredients.
Very tasty with the spices and molasses.

Hi Christine, happy to help! If a recipe doesn’t have yeast, there’s no need for rise times at all, much less multiple rise times. Check out this article on using bread machines for gluten free breads. If you’re looking to make quick breads using a bread machine, there should be a quick bread setting that should work for gluten free breads just as it would for gluten breads. I hope that helps! I have a casien intolerance so no delicious Greek yogurt for me. ????Although I can use coconut yogurt, it doesn’t have much fat, but assume it will still work? Thanks in advance!
Hi Karen – yes, you can definitely use coconut yogurt here. There is a brand of coconut Greek yogurt that I’ve used before, but otherwise, I only use regular coconut, almond or soy yogurt, myself since I can’t have dairy. Enjoy the recipe!
I just made this and it is absolutely delicious! I’m already about to make another loaf to give as a gift. The only changes I made were 1) I used 1/3 cup regular sugar rather than a cup 2) I used some homemade, lightly sugared candied pecans. I used the entire 1.5 cups of finely chopped Granny Smith apple and a heaping 1/2 cup of the chopped pecans. Excellent recipe!

This is now my go-to breakfast bread that I bake once a week. I’m a runner and need something healthy in the mornings before I go out. I have this bread toasted with homemade almond butter and a banana. I have altered the recipe quite a bit but it’s a sign of a good recipe (and amazing flour blend) that it can withstand some substitutions. In case anyone is interested, I now make it with no sugar and instead use 1 mashed, ripe banana along with 1/2 cup of unsweetened applesauce and whole milk Greek yogurt. I increase the baking powder and soda a bit and add in loads of chopped apples and chopped pecans or almonds – whatever is on hand. Thank you!

Would 4 egg whites be ok instead of using 2 whole eggs? Maybe I need to stick with flaxmeal and water? This bread looks amazing!

I can’t take anything concerned with yeast, i.e. Cheese, yogurt, wine etc and even mushrooms are a no-no, as are all fermented foods. What could I use instead of yogurt?
Would a homemade buttermilk be ok? One tablespoon of vinegar in a cup of dairy/non dairy milk?
Hi Sarah, yes, that would work just fine! That’s what I do because I don’t do any dairy, so I either add lemon juice or vinegar to my almond or coconut or soy milk.
