Homemade Gluten Free Cookie Dough Ice Cream Recipe

Gluten Free Cookie Dough Ice Cream was like a mirage to me, back in what I call the Dark Ages of Living Gluten Free. I could find no palatable gluten free substitutes for anything whatsoever.  Thus it was that when I was diagnosed with celiac disease in the 90’s, I had to kiss one of my most-loved treats good-bye: raw cookie dough (shhh – don’t tell!).

Could it get worse? Yes. When I later learned I was also lactose intolerant, I also had to give up my late night straight-from-the-carton-ice-cream eating hobby as well.

Doing without both of these things may have benefited my waist-line, but not my heart.

Doing without is actually what drove me to create my own flour and write my own recipes!  Necessity has always been the mother of invention!

Luckily I was able to finally create the perfect gluten-free chocolate chip cookie, which fortunately or unfortunately meant that I had delectable doughy treats whenever I wanted them!  I later fell in love with new coconut, almond and cashew dairy-free ice cream options, so nothing could stop me!

Gluten free, dairy free (yes, vegan!) Chocolate Chip Cookie Dough Ice Cream now threatens my hips once more, but boy is it making my mouth happy!

I’m so excited to share this super easy and too delicious recipe with you! I most often cheat and use my favorite So Delicious® Vanilla Coconut Ice Cream instead of making my own from scratch, but you could certainly make your own ice cream or homemade frozen yogurt. I even have a recipe for homemade vegan ice cream, so the whole thing can be a from-scratch affair.

The real key is in the amazingly yummy cookie dough itself! Nothing gritty of funky tasting here because we’re using my #1 voted gfJules Flour!

I highly recommend Enjoy Life’s® Mega Chunk dairy-free, soy-free chocolate CHUNKS (but chips are perfectly fine too) or choose another brand of chocolate that you prefer (Pascha Organic even has vegan white chocolate chips!), but don’t skimp on the chocolate!!!!

This is older packaging, but Pascha Organic has yummy vegan white chocolate chips, as well as lots of other milk and dark chocolate chip options.

SO many options, depending on the time available and what flavors you most prefer for your ice cream, and of course, what you want as your base for said ice cream.

Whatever you choose, life is definitely sweet again!*

Instructions

Preheat oven to 350 F.

Evenly spread the gfJules Flour out on a parchment lined sheet pan. Bake in preheated oven for 5 minutes to kill any bacteria present in uncooked flour (it needs to reach 165°F). Alternatively, you could microwave the measured flour in a bowl, stirring a few times to be sure it is evenly heated. Remove from oven and allow to fully cool, then whisk together with baking powder, baking soda and salt. Set aside.

Bring the Buttery Sticks close to room temperature, then beat together with oil/shortening and sugars until light and fluffy – several minutes. Mix in the egg replacer/applesauce and vanilla until combined. Gradually beat in dry ingredients to incorporate.

Stir in chips and nuts, if adding.

Spoon out small teaspoonfuls of dough and place on a plate or bowl, cover and freeze (they may be rounded or unshaped dough balls). Freeze until very cold (1 hour or longer). Whether you use a pint or a gallon, you'll still have more cookie dough than you need, so you get the bonus of making the rest of the dough into cookies!!!

Pick your favorite ice cream or non-dairy ice cream; set out to thaw slightly so that it is easily stirred. Scoop frozen dough balls into the ice cream and mix to distribute. Return to the freezer to set until ready to serve.

Notes

*Since originally writing this recipe years ago, So Delicious® has actually come out with their own Gluten-Free and Vegan Cookie Dough Ice Creams! So, there's yet another yummy option when you're short on time and long on your cookie dough ice cream craving! Always read every label to be sure that ingredients match your dietary restrictions.

  1. I liked you on fb and look forward to gleaning as much information from you as possible as I am still very new to this whole gf thing after being diagnosed with celiac not too long ago. Then we found out my oldest son (age 8)also has celiac as well as allergies to peanuts, tree nuts and soy. I feel like I am learning to cook/bake (and not to mention grocery shop) all over again. And did I mention he also has asperger syndrome? Getting him to try new things is, shall we say, challenging. Either the texture is wrong or it “smells” funny. I am embracing this new challenge though and discovering that I actually enjoy trying new recipes if only to see the joy in my son’s eyes when he can take a bite of a chocolate cupcake or chocolate chip cookie and know that he is not going to get sick from it.

It would be awesome to win these bowls because, for starters, they’re PINK! As a mother of 3 boys I can tell you that there is absolutely no pink in my house! LOL Everyone loves to end a good meal with a great dessert so who wouldn’t love to end this summer with all these yummy treats?!!

Thanks for you contribution to the gf society.

  2. Thank you so much for the cookie dough ice cream recipe. My daughter has been struggling all summer with not being able to eat gluten. When I ask her what she want for a snack she says “something with wheat”. It breaks my heart to have to tell her no all the time. I can’t wait to make this for her. By the way, I have liked you on FB for awhile.

  3. I have never yet won a prize doing these things, but for some reason I don’t give up trying!
I have three children all with multiple allergies. Two of my children are girls and would love using the pink bowls! The cookie mix would be so helpful as my 3 children love cookies and I’ve currently been using your recipe from your book. A mix would be a lot quicker!
We use Earth balance buttery sticks for all our baking because of the children’s milk allergies. We’ve never tried so delicious ice cream, but love their yogurt!
So, it would be nice if we won and the kids could have some extra yummy goodies!

  4. I think any of those things listed would make for a GREAT Ice cream party! I have felt sort of left out of some of them this year, simply because the add ins are not usually gf friendly! Love all those products! Love your recipes and website! They have kept me sane in my transition into and continued gf life!

  7. Oh yes! The coconut milk would be awesome in my recipe I want to make in the bowls! We love the coconut chocolate milk and I have been wanting to try to make ice cream out of it! Forgot about all the other prizes, was so excited about the bowls and your cookie mixes! Just started using the Earth Balance and LOVE it. Does’t bother my pancreatitis and great for my daughters dairy issues. So Delicious is exactly what it’s name says! Was the first ice cream we tried that was dairy free and am now addicted. Can’t get away from the store without buying at least 2 cartons! Just SOOOO excited about it all Jules! My cousins gave me my first bag of your flour to get us started on the diet and we have been telling everyone about it ever since. I think all the ladies in our support group now use it to! They had never heard of it until our first meeting, now they all love it and mention it at every meeting. Keep up the good work helping so many!

  8. Oh Jules! There is SO much I could do with these bowls! Your cookie dough ice cream would be great in these for my daughters birthday party in Nov! She loves pink and will be 15, she could put them in her hope chest! They would match the canister set that was my Aunts, she already has it in there! They would also be great with my persimmon ice cream this fall. I can see them with fresh fruit over vanilla ice cream. Your brownie recipe with ice cream would be awesome to! I have a recipe for no egg chocolate ice cream that would be awesome in them. I think I could make it right in each bowl and them turn it upside down and put melted chocolate over it with a cherry on top! My ideas just keep coming!!! Oh! One more, make cheese cake filling and invert it and crumble your brownies on top for my daughters party to! That would be the best cause she is wanting cheese cake for her party! I like you on FB a long time ago Jules! Love your flour and thanks for helping so many with gluten issues and Celiac!!!
