A bit of trifle history
Trifles are classic English desserts, versions of which date back hundreds of years. They were originally made with layers of sponge cake soaked in wine or sherry, custard, and later, fruit. They were aptly named Tipsy Cakes.
These desserts became popular as a way to use leftover cake, transforming it into an elegant layered treat served in clear bowls to showcase the beautiful colors and textures inside. I love that they weren’t going to let good cake go to waste –douse it in some sherry and give that cake a second life!
While this Gluten Free Berry Trifle recipe doesn’t call for sherry, feel free to give your gluten angel food cake a sprinkle of sherry or a liqueur of choice before adding, if you like. You could also drizzle it over the berries to make them a little boozy before folding into the trifle.
There’s no wrong or right here other than using a great gluten free Angel Food Cake base (no compromising!) — another reason making a trifle is so fun!

Gluten Free Berry Trifle
Ingredients
- 1 9 inch prepared gluten-free angel food cake
- 32 oz. strawberries
- 12 oz. raspberries
- 6 oz. blueberries
- 14 oz. dairy-free cream cheese alternative (like VioLife, Kite Hill, or Tofutti) or cream cheese, room temperature
- 1¼ cups powdered sugar
- 1 tsp. vanilla extract
- 9 oz. dairy-free whipped cream (SoDelicious Cocowhip) or Coolwhip (not dairy-free), chilled in the refrigerator OR homemade coconut whipped cream recipe
Instructions
- Cut gluten-free angel food cake into ½ inch cubes.
- Wash and hull the strawberries, then cut into slices lengthwise.
- Wash and dry the raspberries and blueberries.
- In a large mixing bowl, add room temperature cream cheese, sifted powdered sugar, and vanilla extract. Use hand-held beaters or a stand mixer with the paddle attachment to whip the cream cheese on low until combined. Then whip the mixture on high until it is fluffy, about 2-3 minutes.
- Scoop half of the whipped cream into the cream cheese mixture. Fold it in with a spatula. Gently fold in the remaining whipped cream until the mixture is smooth, creamy, and fluffy.
- To assemble the trifle, spread a thin layer of the cream cheese mixture on the bottom of a 3 quart trifle bowl.
- Arrange a layer of the angel food cake cubes, then add 1/3 of the blueberries, 1/3 of the raspberries, and 1/3 of the strawberry slices. Top with ½ of the cream cheese mixture.
- Repeat with another layer of angel food cake cubes and half of the remaining berries.
- Top with the last of the cream cheese mixture. Garnish the trifle with the remaining angel food cake cubes and berries.
- Cover the trifle and place it in the refrigerator for 2-4 hours before serving. Trifles are best served the day they are assembled.
- Store leftovers in an airtight container in the refrigerator.
