What’s a salad without croutons? Don’t skip them just because you need gluten free croutons — make your own! These delicious tidbits are so easy to make and are the finishing touch on the perfect salad or soup! This recipe also happens to be great for making gluten free breadcrumbs, so make sure to bookmark it!
You don’t even need a recipe card to make bread crumbs — just freeze slices of homemade gluten-free bread and bring out as many as you need at a time (one regular slice of homemade gluten free bread usually yields approximately 1/4 cup of bread crumbs; store-bought gluten free bread has smaller slices).
Break into large pieces and place in a food processor or blender, processing until the crumbs are the size you like. This method makes plain gluten free breadcrumbs. If you’d rather have more of a “panko” crumb, add herbs as detailed in the recipe below.
Use any of my gluten free bread recipes (search the recipes tab for “bread”) or my easy gfJules™ Bread Mix for the yummiest finished product, but you can even use the store-bought frozen bread that might not make such a great sandwich! Such breads often start out fairly dry, so they make fine croutons, but slice larger pieces in case they crumble too much and simply become bread crumbs!

Slice the bread into 3/4 inch cubes and lay out onto a foil-lined baking sheet.
Bake at 375º F for 15 minutes, or until crispy on the edges.
Transfer the cubes to a large skillet with heated oil and toss in the oil, sautéing until the oil is absorbed and the croutons are crunchy.
Toss in the herbs and transfer to a bowl for serving with salad or gazpacho.
