You may have seen these pie cones in a video somewhere already — they do look fun, don’t they? I made them several years ago with my homemade gluten free waffle cones but I realized this summer that I’d never shared my recipe for Gluten Free Pie Cones!

Great excuse to make them again, especially when they’re this easy and require so few ingredients!

The premise is quite simple: you fill a gluten free waffle cone (or your favorite gluten free ice cream cone) with pie filling. There. Pie Cones!

I like to top ours with vegan whipped cream, too, but you could leave them au naturale, topped with ice cream, sprinkles, melted chocolate or caramel or any manner of other deliciousness.

You can also make a homemade pie filling, of course. I have a lovely recipe for homemade cherry pie filling that is divine! (I also have a recipe for homemade vegan whipped cream!) But if you don’t have time, or you’re throwing your arms around the spirit of this recipe in a full embrace, then simply purchase a can of pie filling and whipped cream and make gluten free pie cones in minutes!

They’re really so fun to make and of course to eat.

If you don’t yet have a pizzelle iron yet, I highly recommend getting one. They’re great for homemade gluten free pizzelles (oh my gosh, so yum!), of course, but also for these yummy gluten free waffle cones which are fantastic in their own right for your favorite ice cream treats! So it’s a year-round gadget that won’t break the bank. I’ve linked to the one I use and like.

After a bit, you’ll probably find that you need to spray it with oil (even though it’s non-stick), but when you get the temperature and bake time right, the gluten free pizzelles pop right out!

But if you know you’re going to be making these homemade gluten free waffle cones quite often, you could just jump right to buying a waffle cone maker instead.

It does make it possible to make larger cones, and comes with the shaper roller that makes rolling the cones easier as well.

The key to making these gluten free waffle cones is to under-cook the gluten free pizzelles just a bit so they’re still pliable and soft enough to gently bend into shape. Hop over to my full gluten free Waffle Cones recipe to get all the details and recipe.

Gluten Free Pie Cones

Yield: 8-9 small pie cones
Prep Time: 10 minutes
Cook Time: 2 minutes
Additional Time: 5 minutes
Total Time: 5 minutes

These gluten free Pie Cones are so fun, so quick and so easy! The perfectly portable pie answer to your summer dessert cravings!

Ingredients

Melted Chocolate (optional)

  • 1/2 cup chocolate chips + 1/2 tsp. coconut oil

Instructions

  1. Prepare the homemade gluten free waffle cones or assemble store-bought gluten-free cones.
  2. Dip cone tips in melted chocolate, if desired (gently melt chocolate chips + coconut oil in microwave or on stove-top until smooth)
  3. Fill each cone with pie filling & top with whipped cream or other toppings of choice
