Everyone knows s’mores: smooth melted chocolate atop a sticky sweet marshmallow sandwiched between two deliciously crunchy graham crackers. But have you seen this next level gluten free chocolate chip cookie with the s’more deliciousness baked in? I call it gluten free s’mores cookies, but you can just call them delicious.
Speaking of delicious, what genius invented these delectable treats we call s’mores? Apparently they were born of necessity, just like these gluten free S’mores Cookies!
Although early iterations of this confection can be traced back to ancient Egypt in 2000 B.C., where they were apparently reserved for gods and royalty, by the early 1900s marshmallows had begun to be manufactured efficiently and enjoyed by the masses. Campers were among the first to latch onto these confections as easy-to-carry, light portable sweets.
Soon someone had the bright idea to melt them over the campfire and smoosh them between softened chocolate bars and ever-popular graham crackers (kindof like a homemade Mallomar Cookie or Moon Pie?). That someone was pretty brilliant, actually.
Not so very long afterwards, the first known published recipe for a s’more found its way into a 1927 Girl Scout Handbook where it acquired its catchy name from the phrase “gimme some more!”
Just like there are all kinds of home-baked ways to make Girl Scout cookies gluten-free, there’s more than one way to make a s’more, and make it gluten free too!
I’ve been making my homemade gluten free graham crackers for years, so of course we’ve been making traditional gluten free s’mores for years.
But what about if you’re in the mood for a s’more and there’s no campfire? Hello gluten free s’mores cookies!

Gluten Free S’Mores Cookies
The best gluten free chocolate chip cookies make the best gluten free S'mores Cookies!
Ingredients
- 1 batch gluten-free Graham Cracker Cookie Recipe or gfJules® Graham Cracker Mix
- 1 batch gluten-free Chocolate Chip Cookie Dough or gfJules® Original Cookie Mix, chilled
- 1 cup mini marshmallows (Dandies® are vegan)
- 1 cup chocolate chips (Pascha® or Enjoy Life® are vegan)
- Chocolate squares broken from a gluten-free chocolate bar or use Enjoy Life® Mega Chunks (one mega chunk or chocolate piece per cookie)
Instructions
Bake gluten free graham crackers from gfJules Gluten Free Graham Cracker Mix or from-scratch recipe.
When making the cookie dough, add marshmallows as well as chocolate chips. Cover and chill for 1-2 hours for best results. (May bake immediately, though.)
Preheat oven to 350° F for static ovens, 325° F for convection.
Line cookie sheets with parchment paper.
Fill lined cookie sheets with already baked graham crackers, spaced one inch apart. Scoop rounded tablespoons of chilled cookie dough onto each graham cracker.
Bake for 7 minutes, then lay a chocolate piece on top of each cookie. Return to the oven for another 2-3 minutes. Remove when the chocolate chip cookies are still soft and only lightly browned around the edges so they will stay chewy.
Makes approximately 50 S’mores Cookies. (You will have extra graham crackers for snacking or for making real s’mores by the fire!)

Hi Linda, of course you could, I didn’t because I didn’t think it needed it and it’s so pretty this way, but you could absolutely sandwich the chocolate chip cookie between graham crackers.
