Banana bread is one of those iconic recipes that’s hard to improve upon. But I think you’ll find that this gluten free banana lime bread recipe is a worthy modification.

The tangy – but subtle – addition of lime is just enough to take ordinary banana bread to the exceptional next level. With my gfJules™ Flour, this recipe makes a supremely moist loaf, and the icing, well, it’s the perfect proverbial icing on this awesome cake (ok, bread).

At any rate, it’s a great variation on the old standby that everyone already loves, and a fun way to mix it up for breakfast or brunch. Add some green food coloring to the icing, and it would be the perfect St. Patrick’s Day treat, too!

One note on quick breads made with fruit: don’t add too much banana! It not only imparts flavor, but more importantly, TEXTURE!

It’s also important to read recipes and do exactly what they say in the directions — like not over-mixing.

I don’t know exactly what I did here in bread loaf #1, whether I added too much banana, over-mixed it, didn’t add enough gfJules Flour, didn’t bake it long enough or had the oven at the wrong temperature, but I definitely did something wrong. (Hey, it happens!)

If you’ve ever made a loaf that looks like my #1 loaf below, maybe you were distracted and made one of these mistakes, or maybe you’re not using the right gluten free flour. Whatever you do, don’t give up!

I made the exact same recipe again — even using the same bag of gfJules Flour — and paid attention this time. Gluten Free Banana Lime Bread Perfection! (Loaf #2 is the perfect one, if it isn’t obvious from the photo!). Light and fluffy, full of flavor, easy to slice, not crumbly or gritty … simply delicious quick bread.

Sometimes it happens to us all, but whatever you do, don’t let that stop you from trying again! Just look at my sweet reward!

Gluten Free Banana Lime Bread Recipe

Cook Time: 1 hour 15 minutes
Total Time: 1 hour 30 minutes

This tangy twist on the traditional takes banana bread to new heights! With the irresistible glaze on top, this gluten free banana lime bread may just become your favorite quick bread recipe!

Ingredients

Bread:

  • 2 cups (270 grams) gfJules™ Gluten Free All Purpose Flour 
  • 1 tsp. baking soda
  • 1/2 tsp. sea salt
  • 4 Tbs. butter or non-dairy alternative (e.g. Earth Balance® Buttery Sticks)
  • 1 cup granulated cane sugar
  • 2 eggs or substitute
  • 1 cup mashed ripe bananas (about 2 large bananas, mashed well)
  • ½ cup vanilla or plain yogurt (dairy or non-dairy)
  • 1 Tbs. lime juice
  • 1 tsp. pure vanilla extract
  • 1 Tbs. lime zest (~1 lime)
  • ¼ cup pecans, chopped (optional)

 

  • 1 ½ cups confectioner’s sugar, sifted
  • 1 ½ Tbs. fresh squeeze lime juice
  • 1 tsp. lime zest

Instructions

Preheat oven to 350° degrees.

Whisk together gfJules™ Flour, baking soda and salt in a small bowl.

In a separate large mixing bowl, cream butter and sugar until lighter and fluffy.  Add eggs and beat to combine.  Add mashed bananas, yogurt, lime juice and vanilla.  Beat until fully integrated and no large chunks of mashed banana remain.

Stir in flour mixture, mixing just until combined. Fold in the lime zest.

Spoon batter into an oiled 9×5″ loaf pan. Bake for 50 minutes - 1 hour, or until a toothpick inserted into the bread in several places comes out clean. Cover the bread with foil if it is not yet baked but the top is looking very brown.

Once fully cooked, remove pan from the oven to a wire rack for 15 minutes, then gently remove from the pan to cool completely before icing.

To make the icing, whisk confectioner’s sugar with lime juice and zest, stirring to make a thick, but spreadable mixture. If it is too runny, add more confectioner’s sugar by the tablespoon; if it’s too thick, add one teaspoon of lime juice or milk of choice. If you prefer a thinner icing, simply add more lime juice by the teaspoon until the consistency you like is achieved.

Spoon on top of the cooled loaf and spread with an offset spatula. Allow the icing to set for at least 15 minutes at room temperature before slicing.

I’m been a professional chef for 26 years and have been asked to create GF more and more in the past 5 years or so. Your recipe for AP Flour seems simple enough but I suppose your ratios are where the “magic”happens. It seems to work beautifully in many capacities. I also enjoy your videos on YouTube.       Regarding my gfJules Flour blend, it’s deceiving to look at the ingredient list because it does look simple enough, but the actual raw ingredients are highly specialized and yes, the formula percentages/ratios are highly specific. Having tweaked both the ingredients and the ratios over the years, I can assure you that the smallest changes can make huge differences, so I am always thrilled to hear when experienced professionals are impressed by what my blend can do!

    • Oh wow – I would think it would work on a bread machine’s quick bread setting, but all machines vary. Check the machine’s manual and see what it says for quick breads and a sample recipe — like how much flour is in a recommended quick bread recipe, for example. That ought to give you a good idea of whether the pan size and bake time would be accurate. Then just be sure it’s really done before you take it out — test with a toothpick just like if it was in the oven, and add time on the machine (if settings allow) or put in the oven to bake longer if need be. Let me know how it goes!

    2( muffins mix outstanding.added some cut up strawberries and choc.chops : ) 3) scratch Banana Bread GF easy Old Fannie Farmer recipe no butter no milk 2C. Your AP flour.1 tbso tapica flour2eggs. 3 bananas/ 1+1/2 c… 3/4 cup Packed brown sugar salt .soda 1 tsp each. Buttered parchment lined deep 9×5 loaf 45mins + 8 mins perfect your flour is great!

  3. I would have never thought to combine banana bread and lime. What an interesting combination! I shared it with my friends who are already missing the key lime cake mix from Aldi. (I imagine yours is MUCH better.)

  5. This is my favorite recipe. I make it at least twice a month.
    I use smaller loaf pans and can get 4 loaves from one recipe. Sometimes I use tiny round pans!
