Not only is it a deep dish pizza rivaling any Chicago pizza you may have had (made with gluten, of course), but it’s also one of the easiest gluten free pizzas you’ll ever make.

Even if you’ve never made a gluten free pizza before, you’ll have no trouble with this recipe, as all you do is whip up my easy gfJules Gluten Free Pizza Crust Mix (or follow this from-scratch recipe) and press the dough in the bottom of the slow cooker. After you adorn the pizza with all your favorite pizza toppings and sauces, you simply push a button. There’s nothing more to it! 

It’s the bread machine equivalent to a pizza machine! It does all the “hard work” for you!

Seriously, just go about your business and right about the time you start smelling the fragrant herbs and yeasty smells wafting from your kitchen, this beauty is ready for slicing!

But if you’re into E A S Y, and you have a crockpot or slow cooker, then this recipe is for you! I’m telling you, it really couldn’t be easier to get the deep dish gluten free pizza we all crave. 

As for what size slow cooker / crockpot works best, I tested this recipe in 4 different crock pot / slow cookers now. This a link to one of them, for reference. A larger oval one … standard size is about a 6 or 7qt. seems to work best, but it’s really all about getting the bake times right for your machine. The first time you try the recipe just write down a note for how long your crockpot takes to cook the pizza and from then on, it’ll be a breeze!

How to Make Gluten Free Slow Cooker Pizza

Simply follow the mix directions to make the dough (again, SUPER easy!), but if you only have one crock pot, you’ll be following the mix directions to make only ONE pizza crust. My gfJules Gluten Free Pizza Crust Mix is a double mix — the full mix makes TWO large pizzas. Each slow cooker crock pot can only hold one pizza crust. So you’ll measure out 1 2/3 cups of my pizza mix (8.5 ounces) and only add half of the liquid ingredients (as noted in the recipe card). 

Spread the dough out onto a piece of oiled parchment. Unlike a typical pizza, you’ll add your cheeses FIRST, then sauce and toppings, then more cheese, if you’re into that. I recommend adding the cheeses first to keep the sauce from seeping into the dough as much while it rises and bakes, plus it gives you the opportunity to add an extra cheesey layer if you like!

You’ll see from this photo how I like to go in and keep pressing the dough up the sides of the crock pot as I add the layers of cheese and toppings to keep it from slumping down too much. This dough is going to rise riSE RISE, so I try to make sure it’s not too thick when it starts out if I can.

Once you’ve topped your pizzas, cover the slow cooker with a paper towel to absorb condensation that builds up during baking, then put the lid on. Set the slow cooker to HIGH and cook for 2 1/2 hours unless you know your slow cooker tends to cook extra hot, then you should set it for only 2 hours and check the crust with a toothpick to ensure it doesn’t burn. That’s it. Walk away and work on your patience as you wait for the best deep dish gluten free pizza to rise and bake!

Take a walk in the woods, practice yoga, watch your kid’s baseball game, or heck … go back to work! It doesn’t matter what you do because you don’t have to DO anything else to make this pizza. It makes itself. It’s kinda magic.

Pro tip: If you prefer your pizzas to be super brown on top and your cheese to look like it’s come out of a pizza oven, all you have to do is pull it out of the crock pot once it’s done cooking — parchment and all — and put it on a baking sheet. Then place it under the broiler in your oven for a couple minutes and voila! Chef’s kiss!

Gluten Free Slow Cooker Pizza Recipe

Total Time: 2 hours 45 minutes

Making a gluten free pizza in a slow cooker is the easiest way to deep dish pizza nirvana!

Ingredients

Instructions

  1. Whisk together measured dry mix, yeast and liquids in mixing bowl, stirring to combine, then increasing mixer speed to medium-high and continuing to beat for 2 minutes.
  2. Oil a piece of parchment larger than the bottom of the slow cooker (see photos above for reference). Spread out the pizza dough to approximately the size of the bottom of the crock pot. Oiling your hands well will help keep the dough from sticking.
  3. Place the parchment with the dough on it into the slow cooker, then spread the dough out again, pressing it one inch up the sides. Spread shredded cheese, then sauce and toppings, then more cheese, if you like.
  4. Place a paper towel large enough to cover the entire crock pot on top, so it drapes over the sides, then place the lid on top.
  5. Set the slow cooker to HIGH and set timer for 2 1/2 hours, or if you're using your slow cooker for the first time and you're unsure of how hot it cooks, set it for 2 hours the first time and test, since you can always add more time.**
  6. To check for doneness after cooking, stick a toothpick into the crust to make sure it is clean, not wet. If you prefer the crust and cheese to be browner on top, remove the parchment with pizza on top and place on a baking sheet in the oven on broil for 2-3 minutes before serving.

  1. This is pretty amazing! Very, very sticky dough! It’s really amazing how it rises and bakes in the slow cooker! That said, I would recommend that you use a 6 qt or larger slow cooker. I have only a 4.5 qt. It works, but there is smaller “real estate” for the pie. With a smaller slow cooker definitely check it at 2 hours (or even a bit before that). One slice is pretty filling. I’m glad I gave this a try. Thanks, Jules!

  2. I have an instant pot that is both a slow cooker and a pressure cooker. The lid is one that twists to close – I’m not sure that the paper towel will not rip and then drop onto the pizza prior to cooking. Any suggestions for using an Instant Pot?

    • Because you’re not using the pressure cook feature, it’s not crucial that the lid be sealed well for the slow cooker to work. You should be able to just lay the lid on top without twisting it to close, thereby allowing you to still use the paper towels. If not, you can skip the paper towels and hopefully there won’t be too much condensation; you may want to open the lid to air out the moisture periodically in that case.

  3. Hi,
    I went to make the pizza and I’m confused. Are the yeast packets separate or included in the mix? I have no packets with the mix I received.

    • Hi Kathy, yes, the pizza crust is supposed to have 2 yeast packets inside the mix. Have you dumped the whole mix out to be sure they’re not inside — sometimes they’ve settled towards the bottom of the mix? If they aren’t, I’m sooooo sorry! That’s not at all right! Please contact [email protected] and they’ll make it right for you!!!

  4. I absolutely love pizza, but being gluten intolerant has made it difficult to find good options. This gluten-free slow cooker pizza recipe looks amazing and easy to make. I can’t wait to try it out and see if it rivals any Chicago deep dish pizza I’ve had before.

    • I can’t wait to hear what you think, Janice!! Pizza is one of those things that we all seem to miss the most when we go gluten-free, and those thin rice cracker crusts just don’t cut it! This gluten free slow cooker pizza recipe is great for many reasons, not the least of which is that it makes a serious deep dish gluten free pizza EASY! If you want that pizza oven char on top, don’t forget to toss it in under the broiler in the oven for a couple minutes for the perfect finish, though!!

  5. Hi. I’ve seen many of your lovely recipes but being English, I’m not sure of the measurements of cups. Is there any hard and fast way to measure a cup? I prefer to use grams to measure.
